Follow the spacing to a plant's mature size, not its seedling size. The gaps look wasteful in spring and pay off by midsummer, when crowded plants turn small and disease-prone. Offset planting packs more in but makes walking rows harder.
Square vs offset layout
A square grid lines plants up in even rows and columns, which is easy to weed and harvest. An offset (triangular) layout staggers every other row so plants nest closer together, fitting a few more in the same bed at the cost of tighter walking room.
Space to the mature size
